: Legally Blonde AmbitionSpicy Southern Shrimp
By "Daisy Duke"
Spicy Southern Shrimp
2 pounds of large shrimp
2 Tbsp butter or olive oil (I use olive oil)
1/2 of a sweet onion, diced
1 Tbsp chopped fresh basil (or 1 tsp dry, but fresh is much better)
1 Tbsp chopped fresh oregeno (or 1 tsp dry...but again, fresh is better)
1 bay leaf
1/4 tsp of red pepper flakes
1 garlic clove
Salt & Pepper
Peel & devein shrimp, remove tails and rinse thoroughly.
In a large skillet or saute pan, over medium-high heat add olive oil, onion, basil, oregeno, red pepper and the bay leaf. Saute for 5 minutes or until onions are clear and add the garlic, and saute for another minute or two. Stir in shrimp and cook until pink, approximately 6 minutes or so. Remove from heat & discard the bay leaf & serve.
Deelicious. Again, I love this recipe because it is so easy and "fine tune-able"- I love basil so I typically use a little more, if you are feeling particularly spicy, add some hot sauce, etc. It cooks so quickly that when it is hot in the summer you can actually make dinner without heating up your whole house or slaving away in the kitchen. And, with the small amount of olive oil it really is a healthy, high protein dish. Mmmm.
And now I really should study for the bar. Seriously. Because if I don't, the results could be disastrous. Very, very disastrous.
