Turkey Eggplant for Thanksgiving: A #Madoff Favorite!

RE: Bongiorno Bail

Julian-Once again, the media has managed to misquote me. I did not say that Ms.Bongiorno is no threat to anyone except an uncooked eggplant. What I said was that Ms.Bongiorno is no threat to anyone or anything, including an uncooked eggplant.

As evidence that we'd be happy to submit to the court, below is my client's world-famous recipe for Turkey Eggplant Romano, a recipe that has been embraced by leading gourmet chefs, including Carmine "Junior" Persico.

As you might be aware, and as even Bernie Madoff can confirm, Junior is the sous chef at one of the coziest federal penitentiaries in the entire country, and this exact recipe is going to be served tomorrow, as part of   the Thanksgiving Feast at his "restaurant".

1 1/4 cup turkey stock
6 ounces tomato paste
1 eggplant, peeled, diced
1 onion, minced
1 clove garlic, minced
parsley sprigs, chopped
2 teaspoons Italian seasoning
1/2 pound turkey, cooked-1/2" cubes
4 tablespoons Romano cheese, grated
Combine all ingredients except turkey and Romano cheese in a large non-stick skillet (or other skillet, sprayed with Pam).

Simmer uncovered, stirring frequently, until eggplant is tender and most of the liquid has evaporated (10 to 12 minutes). Stir in turkey and heat through.

Sprinkle with cheese and serve immediately.
