Can my employer change my salary rate without my written consent and approval?


I am a Night Manager at a hotel & i'm getting a fixed monthly salary. Recently, the owner, thru my supervisor, wants my salary to go back on an hourly basis and on my original 12/hour rate. And that if I have questions I need to see our controller. I said it needs my consent and I am not giving consent to it. I said if they do that w/o my written consent, i'll sue and add compensation for the hours i worked without getting paid overtime and for the night differentials that they never gave me at the time that I was working graveyrad shifts without anybody to cover my break. My questions are, can they change my rate without my written consent? Am I entitled to overtime pay if my title said I am a Night Manager?
