The End of The World

ADVERTISEMENTS
BISMOW and I drove through the apocoli (plural for apocalypse) going back and forth to another Midwestern state for a wedding this weekend. We actually pulled over and sat in the car waiting & watching for a tornado funnel to come down upon us. We determined if we saw a funnel we were ditching the car (but I was bringing my new handbags with me, for real, they were in my lap in case of running) wearing BISMOW's sailing-rain gear jackets (that we had already donned) and booking it for a nearby filling station that looked sturdy & windowless....but there was no funnel and we just watched the streets fill with water instead. And then we got back on the interstate & made it home.

The wedding was lovely (ceremony was no more than five minutes long and then it was reception a/k/a open bar time which was nice considering it was an outdoor wedding and it was sweltering outside) and now we are back. I am tired. My studying was minimal. But to start the week off I promised Eddie the recipe of Salami Squishes. These delectable appetizer delights are awesome for two reasons: they only have two ingredients, and people find them amazing. Seriously. I've watched an entire tray go in approximately 5 minutes. My Mother and I are often requested to bring them to parties & get togethers. If you are ever in the need of a quick and easy appetizer, here goes:

Duke Family Salami Squishes

1/4 pound of Genoa salami (from the deli counter) sliced very thinly
1 small tub of Philadelphia Onion & Chive cream cheese

Take each slice of salami and place a small dab of cream cheese in the middle, approximately a heaping teaspoon. "Squish" salami together so you have a "bouquet" if you will, similar to a sachet or anything else you place in a bag and then tie the edges of the bag up at the top with a ribbon....does this description make sense? Fancy people like to roll the salami and put a toothpick in it, but one time Mama Duke and I were feverishly trying to fill a serving tray while men-folk stood around eating them faster than we could fill, so we just sort of smushed the edges of the salami's in and made "boquets" of salami squishes. Turns out this technique speeds the time up substantially. Serve cool (i.e. don't let them sit out in the hot sun, but they are fine to sit for awhile indoors). I suppose if you were feeling crazy you could chop up some chives and put them in the squishes as well but they are delicious as is and need no sort of accoutrement's.
