Stuck In A Rut

By "Daisy Duke"

ADVERTISEMENTS
This is it guys. I'm not even married yet and I'm stuck in a "What's for dinner?" rut. We have our go-to recipes: healthy Mexican, homemade pasta sauce, red beans & rice, pork tenderloin & grilled chicken. The meat dishes are served with steamed or sauteed veggies & sweet potato something (baked.....cubed.....mashed.....) and the other dishes are served with a whole wheat grain. We have a small salad before dinner. In the winter I make turkey chili or spaghetti. In the summer I make Spicy Southern Shrimp.

I need new recipes. Things that are fun, yummy & quick-ish to make. (I don't mind spending 45 minutes in the kitchen, but a 3 hour pot roast isn't my idea of fun either.) Rachel Ray's 30 minute meals are great in theory but each of her meals uses 29.7 ingredients and frankly, that is a lot of stocking the kitchen.

So I ask you to share with me your favorite go-to dinner recipe in the comments. We like just about everything but I'm not a huge rice fan and we both dislike mushrooms immensely. And I don't really like peppers. Or raw tomatoes.

Speaking of raw tomatoes, I can eat them in this delicious recipe. I made it when Dysfunction Junction came over for the Hawks game and it really is a fun appetizer and easy to make.

Mama Duke's  Bruschetta

(For when you live somewhere that delicious mozzarella isn't an option. Like when we lived in England and she despaired & then invented this recipe.)

1 loaf of french bread, cut into 1/2 inch thick rounds & toasted
1 tub of low fat chive & onion cream cheese
4 roma tomatoes, scalded, peeled & cut into small bits
1 white onion, minced
4 cloves of garlic, minced
5 tbsp fresh basil, minced
2 tbsp olive oil
Kosher salt
Freshly ground black pepper

Assembly: Mix veggies, herbs, olive oil, salt & pepper. Place toasted french bread rounds on platter & then apply a thin layer of cream cheese to each round.  Top each round with a spoonful of veggie mix & sprinkle fresh ground pepper on each round. Ta-da!!
