: Legally Blonde AmbitionPizza Pizza!

ADVERTISEMENTS
I love home-made pizza. We made it a lot growing up, and my Mother would split the pizza into quarters to "decorate" as we pleased. Her quarter was piled high with sauteed veggies and the dreaded olive (one of which always hid under the cheese and sneaked over to my quarter) my Dad was a pepperoni and ham guy, Bubba was solely pepperoni and I always did extra cheese with one pepperoni in the middle. Ahh. Good times. We also made home-made pizza every Christmas Eve, which was a fun tradition I hope to continue with BISMOW. That and pizza parties with kids are way too much fun- just split the dough into individual pies & let them decorate with their favorite toppings. My Mother's pizza dough recipe is great, but I've made a few tweaks & now...even more yum! So lets make some pizza!
You have to start this in the afternoon to allow the dough to rise- normally around 1 or 2 I start making the dough. Also, a mixer is essential. You just can't do this by hand.
5-5 1/2 cups of bread flour
3 Tbsp honey
1 Tbsp dry yeast, super fast acting
1/3 cup good quality olive oil
1 1/2 tsp salt
1.5-2 cups warm water (Not cold! Not Hot! Warm!)
In a mixing bowl pour in 1/2 the flour and the rest of the dry ingredients. Top with the remaining flour (but no more than 5 cups total). Add olive oil, honey & 1 cup of the warm water. Mix with paddle mixer until combined & sticky. Test dough "stickyness" and add flour or water as needed to obtain a sticky consistency that stays in one large glob. You want the dough to stick a little to your finger when you poke it- not come away slimy and covered in dough or to come away completely clean. Once the right consistency is obtained, remove paddle mixer & replace with dough hook (spray with cooking spray to prevent sticking) and turn the mixer onto medium speed. Allow to mix for 15 minutes.
Coat hands and work surface lightly in flour and remove dough from bowl. It should be a nice consistency, easy to manipulate and not too sticky. Split into two balls, and squish them out. Tuck edges under and roll vigorously into a smooth ball with no seams. Cover the dough-balls with a clean tea towel & allow to rise until they double in size. (If you are having a pizza party you can split this up into 6 dough-balls.)
Punch dough down & roll into circles. Place on pizza stone or cookie sheet & bake at 10 minutes for 450 degrees with NO TOPPINGS. Remove from oven, and add toppings. Bake again for 5 to 10 minutes until toppings are cooked and bubbling. For an extra special treat I like to make Pioneer Woman's Roasted Garlic (typically after I make the dough, then the garlic is ready & the oven cooled off before it is time to bake the pizza) & spread it on the dough underneath the sauce after it comes out of the blind-bake. Then I top with fresh basil that I've chopped up, and freshly grated mozzarella. Ooh-la-la!
Serve & enjoy!
