Because 140 characters is too short to type a recipe

@it2d (a/k/a Ismael) wanted the recipe for my meatless baked ziti. I never post recipes here because I don't consider myself to be much of a cook, but he asked, so here goes.

In a really large pot, add one chopped onion, minced garlic, basil, salt, black pepper, & olive oil and cook for about a minute. Add two cans crushed tomato. My sister suggested a brand (Cento--yellow label). It is my current favorite.

Simmer & taste and add spice until you like the sauce. Sorry I can't be more specific -- I'll try to measure next time. I did this for about three hours, adding some sugar also because it got a little bitter. I always wait 30 minutes after adding something to taste again. Normally I would add crushed red pepper but I was cooking for kids too, so I garlic-ed it up instead.

Cook two pounds of ziti (two boxes) and drain.

When sauce tastes good, add 16-18 oz ricotta (I bought 32 oz), two eggs, 3tbs Parmesan, one cup mozzarella, one cup "Italian three cheese mix". It gets goopy. Add the ziti to the pot and stir to coat the ziti.

Pour the goopy ziti mix into a lasagna pan and cover with foil. Best thing about this dish is that you can pop this in the fridge and bake it when the guests arrive for service about a half hour later.

Before baking, scoop on some extra ricotta and sprinkle on some more parmesan, bake at 400 for thirty minutes covered with foil.

Optional, but I did this last night: Uncover for last ten minutes, sprinkle some more mozzarella on top (about a half cup) and bake for final ten.
