I Dream A Dream...

By "Daisy Duke"

ADVERTISEMENTS
Part of what I love/adore/pine for about the holiday season is that you have full reign to dream. You can dream of world peace, getting along with your family (even if it takes two bottles of wine to get there), the perfect gift for your persnickety Dad, or just the perfect gift you are hoping is sitting under the tree or by the Menorah. The holidays allow a little bit of that dreaming, before the reality of yet another year hits you, with crappy cold weather & months of dreary dirty-slushy sidewalks before spring finally arrives. (Why no, I don't care for January, why do you ask?)

So I am starting this Sunday to Monday Reader's Poll with a question and a recipe for (appropriately) Dream Bars. First lets start with Dream Bars. Over the years Mama Duke collected some old fashioned British cookie & sweet tins that all had a Christmas theme. Old fashioned Santa Clause, carolers, and images of tiny British villages, nestled into blankets of snow with Christmas trees lit up. Every December Mama Duke would take all these tins out and fill them with Christmas delicacies for the visitors & family that stopped by. She would set up the entry table with a few of her favorite Nutcrackers (my favorite was The Mouse King Nutcracker, the character from, what else, The Nutcracker) and among the bowls of nuts to be cracked were tins of homemade fudge, divinity, chocolate dipped pretzels, tangerines, Christmas Bark, and Dream Bars. (Can you tell which two tins were my favorite?). Dream Bars combine an odd yet easy cast of characters into something that even the coconut-hater in your family just might like. The graham cracker crust of the bar holds up a sweet confection of pecans, chocolate and coconut and somehow it makes a chewy, delicious treat. (Myself, I don't care for coconut. Unless it is on a Dream Bar. And then, bring it on.)

So I ask all of you (recipe below) what your dream is this holiday season. It might be as simple as "getting through to January alive" and it might be as big as "finding the new perfect job." It might also be a pair of rain boots (they are near the top of my list!) a new book you've been dying to read, or for the big dreamers, a new piece of jewelry from Tiffany's. (What? I didn't ask for anything in a little blue box. I swear.) I'm curious what you are dreaming of this December. And while you ponder it, whip up a batch of these. Those who eat them will thank you.

Dream Bars

1/2 cup butter  6 oz Chocolate chips (I typically use more...)

1 ½ cup Graham cracker crumbs  3 ½ can coconut flakes (or about 1 cup)

14 oz can sweetened condensed milk  1 cup chopped pecans

Preheat oven to 350.  Melt butter and pour evenly into 9 by 13 inch pan.  Press graham cracker crumbs into butter.  Pour condensed milk over crumbs evenly.  Layer chocolate chips, coconut and nuts over milk.  Press firmly into place.  Bake 25 minutes.  Let cool completely (a few hours!!) before cutting into squares.
