Soup and Teriyaki Days

By Andrea

ADVERTISEMENTS

Thanks for giving me all those vegetarian blog recommendations a while back. I have used them well. After spending too much money for Au Bon Pain soup on cold work days, I decided we should make a big pot of soup every Sunday for a couple of days of lunches. Our successful ventures:

Cheddar, Corn and Potato Chowder from Whole Foods' recipe stash. I thought this was the perfect soup, period. Super comforting. Make sure the potatoes get nice and soft. And as usual, I added way more than a pinch of red pepper flakes, because I can't stop using them.

Moroccan Lentil Soup from Happy Herbivore: This was very hearty, especially because we were too lazy to puree it so it became a lentil stew instead. I never cook with dried lentils and it was super easy. I omitted garam masala since I don't own that, substituted a little chili powder for paprika, and used regular brown lentils instead of red, and it still worked for me.

And a non-soup venture I tried: Spicy Teriyaki Chickpeas With Pineapple Salsa from Happy Herbivore. Dan liked it, but I LOVED it. It took five minutes, literally. I used regular sugar instead of raw, hot sesame oil instead of szechuan sauce, and served it with chunky mango/peach salsa and a few spoonfuls of crushed pineapple out of a can, all over that magical Trader Joe's microwave brown rice. Nom nom nom.

Next up: Potato Apple Ginger Soup from Vegan Dad.
