Big Dan Salad

The Dan Salad was born in the dorm cafeterias of Claremont McKenna, when new vegetarian Dan often didn't like his options and had to rely on the salad bar to put together something edible and filling. When he made it for me, I had to admit that it was very satisfying, not to mention protein-filled, and now it's something of a Sunday night tradition - but sans the Thousand Island that he used to put on it!

Romaine lettuce
Cucumber slices
Tomato chunks
Chickpeas
Kidney beans
A few hardboiled egg halves
Croutons
Honey mustard, sweet onion, or other favorite dressing

Combine to taste in a large bowl, stick in two forks, and off you go.
