So rabbit day. I write this not to revel in the killing, which was unpleasant(although I am certain there will be those who refuse to believe that). I write to remind all of us who eat meat that we have a responsibility to ensure the animals we eat do not suffer in life or death. We put 17 rabbits in the freezer tonight. Some say it is unnecessary. J, for example, is pissed at me right now. But, most of the complaints will be hypocritical. Those who shovel burgers into their face will take the time to write about what a bastard I am. Fine. But I can rest easy. These animals did not suffer in life or death. We have pounds of organic meat in the freezer. Nothing was wasted. The meat is for us. The hides are being salted and will be tanned this winter. The rest were boiled over a fire and fed to the hogs. Free protein. It is unpleasant but I do not feel removed from my food. I am not allowing the animals I eat to suffer, even if it costs me time and money. So. Rabbit day. Many thanks to the interns who helped me...you made an intolerable job manageable. I will make the rabbit stew on Thursday when we make beer.
